My favourite cookie is this peanut butter cookie. It is the perfect amount of peanut butter & chocolatey goodness.
When I was 17 & Nathan was 21, he had to get emergency surgery to get his gall bladder removed. I went to visit him in the hospital to play cards to help him pass time. Before my visit, I thought it would be super sweet to bring these delicious peanut butter cookies.
I show up to his hospital room with a plate of warm cookies, fresh out of the oven. Grinning wide & stretching my arms out to hand him the plate, he sadly reminds me, “Bailey, these smell amazing, but I have to fast until tomorrow because of the surgery.” Oh no!!! I felt so bad.
Nathans sister, his parents, and I ate the cookies while poor Nathan was starving in his bed haha. We did save him a couple for the next day. Poor guy!
Now whenever I make these, I always remember that hospital visit.
I always start off baking by mixing together butter, sugars, & egg for about 2-3 minutes alone.
This allows the sugary mixture to get fluffy.
Then I add in the remaining ingredients. Baking powder, flour & peanut butter.
Once everything is done mixing, I roll medium sized balls out of the dough. Probably about the size of 1.5 Tbsp.
After rolling the dough into balls, coat the balls in white granulated sugar & then place on baking sheet. (Baking sheet does not require parchment paper or grease)
Line the sugar coated balls onto a baking sheet & place into preheated oven. I usually fit close to 2 dozen on one sheet.
Bake for 8-10 minutes at 350F. While they’re baking, cut up pieces of chocolate to stick into the centre of the cookies when they’re out of the oven.
If I don’t have a large chocolate bar to cut up, I’ll use 4-5 chocolate chips per cookie.
When the cookies are out of the oven, stick a piece of chocolate in the centre while they’re still hot.
Then devour them as fast as you can, because they never last long!!
Peanut Butter Chocolate Cookies
1 Cup Margarine
1 Cup White Sugar
1 Cup Brown Sugar
1 Cup Smooth Peanut Butter
3 Cups White Flour
1 1/2 tsp Baking Powder
Chocolate pieces (Hershey kisses, chocolate chips, chocolate bar, etc)
- Preheat oven to 350F.
- Cream together margarine, sugars, & eggs. Once mixture is fluffy, add in peanut butter. Mix well.
- Sift together flour and baking powder, then slowly add into sugary mixture.
- When everything is incorporated nicely, start making balls out of the dough ~1.5-2 Tbsp in size.
- Roll balls in a bowl of granulated white sugar. Place on ungreased baking sheet & bake for 8-10 minutes at 350F.
- Once cookies are done, press a piece of chocolate into the centre of cookie while it is still hot.
