Calling all lemon lovers!! This cookie is for you.
This cookie is like a glorified, soft, chewy, sugar cookie. But WAY BETTER.
I haven’t made these a ton, but whenever I do, they’re a hit.
I found the recipe on this blog and I hardly changed anything. The original recipe calls for food colouring & I skipped over that. I have a weird thing when it comes to food dye lol. One thing I would add, is a bit more lemon juice/lemon extract…only if you’re crazy about lemon.
Anyway, give this recipe a try. It won’t disappoint!
LEMON CRINKLE COOKIES
2 cups Flour
2 tsp Baking powder
1/2 tsp Salt
1/2 Cup Butter, softened
1 cup Sugar
2 Large Eggs
2 Tbsp Lemon Juice
1 tsp Lemon Extract
1 tsp Vanilla Extract
1/2 cup Powdered Sugar
Preheat oven to 350F degrees.
Line a baking sheet with parchment paper.
In a mixing bowl, cream together butter, sugar, eggs, vanilla, lemon juice, and lemon extract. (If wanted – add in 5-6 drops of yellow food colouring)
Sift together the flour, baking powder, and salt and add into the sugar mixture slowly until all ingredients are incorporated.
Pour powdered sugar onto a plate.
Form 1 inch balls from the dough and roll them into the powdered sugar to coat well. Place balls onto baking sheet.
Bake for 8 minutes.
Allow to cool on the baking sheet slightly before transferring to a cooling rack.
